I love a simple and delicious salad – lunch or dinner; hot or cold; side or main; they can be so versatile. Ingredients
  1. 250g Purple Sprouting or Tenderstem Broccoli
  2. 500g Green Beans
  3. 150g Chopped Kale
  4. 4 tsp. Organic Supergreens Powder
  5. 150g Pomegranate Seeds
  6. 6 tbsp. Olive Oil
  7. 3 tsbp. White Wine Vinegar
  8. Salt and Pepper
  9. lg. handful Fresh Parsley
Instructions
  1. First, top and tail the beans, and chop them in half. Bring a large pan of water to the boil, and rest a colander over it, to steam the vegetables. First, add the broccoli and steam, covered for 2 minutes, then add the beans, cover, and steam for a further 2 minutes. Finally, add the kale, cover, and steam for 4 minute more, then dowse the vegetables in cold water, to halt the cooking process.
  2. Arrange the greens on your serving dish or bowl (or just dump them there, if you're not worried about presentation!). Sprinkle over the organic supergreens powder, to make it a supergreens salad.
  3. To make the dressing, finely chop the parsley and put it into a small jar. add the olive oil and vinegar, and liberally grind in salt and pepper. shake the jar for 30 seconds or so, then drizzle the dressing over the salad, and top with pomegranate seeds.
