Gluten Free Beer-Grilled Sticky Tofu with Redwell Brewing’s Gluten Free Stout

Now, before I gave up gluten, stouts were my go-to beers, and a rich coffee stout is still one of the things find it hardest to say no to, so when the lovely people over at Redwell Brewing, in Norwich, offered me a taster of their small-batch gluten-free stout, brewed with coffee beans from their local coffee shop, I was thrilled.

This beer was beautiful. like, actually beautiful. As mentioned, I love a good stout, but though gluten-free stouts usually taste great, they often don’t have the thick body of a ‘proper’ stout. The gluten-free Kofra stout, however, had a velvety texture and gorgeous coffee kick – not surprising considering that there is the equivalent of a double shot of espresso in every can.

Ingredients
  1. 200g Firm Tofu
  2. 3 Cloves of Garlic
  3. 1 Red Chilli
  4. Zest of 1/2 a Lime
  5. 1/2 tsp. Ground Coriander
  6. 1/2 tsp. Smoked Paprika
  7. 1 tblspn. Honey or Maple Syrup
  8. 1 330 ml Can of Gluten Free Stout (I love Redwell's Gluten Free Kofra Coffee Stout)
Instructions
  1. First, prepare the tofu. Remove it from the packaging, wrap in kitchen paper and press between two boards with a weight on top, for at least an hour on each side, then cut it into even pieces, each around 1-2 inches, and add to an ovenproof dish.
  2. Finely chop the garlic and chilli and add to the dish, with the lime zest, coriander and paprika. Drizzle over the honey and then pour on the can of gluten free stout and stir.
  3. Leave the tofu to marinate in the fridge for 12-24 hours, turning occasionally, if you have time.
  4. When you are ready, preheat the oven to low (around 150°C) and then slowly bake for around an hour, turning again halfway through.
  5. Remove the tofu from the oven. There should be some liquid still in the dish - scoop the tofu, and the marinade out into a hot griddle pan and grill until crispy - this should only take a few minutes.
  6. Serve with steamed greens (and a cold beer).
