This Courgette Stir Fry is such a simple dish, I throw some variation of it together as a healthy, filling weeknight dinner quite often – the beautiful thing is that it is so versatile: swap out the vegetables for others, depending on what is in season, and change it up to serve with rice or quinoa, in place of vermicelli.

This is a really quick, flavoursome and colourful dish, which works well whether eaten hot and straight from the wok, or saved and eaten cold the next day, as a cooked salad. Make sure to prepare everything first – you could even chop the vegetables and mix up a batch of the sauce a day or so ahead of time, if you know that you’ve got a very small window for dinner one night.

For the Stir Fry
  1. 1 Head of Broccoli
  2. 1 tsp. Coconut Oil
  3. 3 Spring Onions
  4. 2 Courgettes
  5. 2 Bell Peppers
  6. 2 Vermicelli Nests
For the Sauce
  1. 1 Red Chilli
  2. 4 Cloves Garlic
  3. Fresh coriander
  4. 2 in. Fresh Ginger
  5. 1 Lime
  6. 1 tblspn. Gluten Free Soy Sauce
  7. 1 tblspn. Peanut Butter
  8. ½ tblspn. Rice Vinegar
  9. ½ tblspn. Sesame Oil
  10. 1 tblspn. Sesame Seeds (+ extra to garnish)
Instructions
  1. First, prepare all the ingredients: chop the broccoli into florets and roughly slice the spring onions, from the greens to the whites.EatsLeeds Courgette Stir Fry with Sesame and Lime Recipe - Spring Onions
  2. Slice the courgettes into thick juliennes (the quickest way to do this may be to use a mandolin, so long as you are very careful, and not overly fond of your fingertips! For reals though, a mandolin speeds up this type of chopping no end) and slice the peppers too (again, you can use a mandolin).EatsLeeds Courgette Stir Fry with Sesame and Lime Recipe - Pepper
  3. Prepare the ingredients for the sauce and add to a jar (an old jam jar works fine): Finely chop the chilli, garlic and half of the coriander, then use the fine side of a grater to grate the ginger and zest the lime. Chop the lime in half and squeeze one half directly into the jar (setting aside the other half to garnish) and then add the soy sauce, peanut butter, vinegar, sesame oil and sesame seeds to the jar and give it a good shake.
  4. When everything is prepared, add the broccoli to a large wok with a 1/4 cup of hot water, cover and steam over a medium-high flame for 3-5 minutes, until the water has mostly evaporated.
  5. Turn the head right up, add the coconut oil and the rest of the vegetables to the pan and stir fry for a few minutes more, before adding the sauce.
  6. Continue to cook on high for another 7 minutes or so, until the liquid has mostly evaporated and all the vegetables are cooked through.EatsLeeds Courgette Stir Fry with Sesame and Lime Recipe - Vermicelli
  7. Whilst the dish is continuing to cook, make the vermicelli: bring the kettle to the boil, then put the nests of dry vermicelli into a bowl or jug, and cover with the hot water. Let it stand for one minute, then drain and add to the wok at the last moment, to mix with the rest of the dish.
